Question:
I have an egg plant I have been trying to find information on. It has eggs that look like a real egg. It starts out with little purple blooms then a little white egg will grow. They are about the size of a small chicken egg. I have heard that these are edible but can not find any information on them. Can you help me? Thank you. Tamm
Answer:
These surfaced on the market a number of years ago and did not catch on as a viable vegetable form. Who ever thinks of eggplant as white? They are however unique and are indeed edible. The last variety I saw was called "Easter Egg". They no longer appear in the Burpee catalog. Maybe a novelty seed supplier like Gurneys Seeds may have them.
